Enselada Fresca Fresh Salad Ramadan Recipe

Ensalada Fresca Fresh Salad

 

Ingredients:

  •     1 package (8 oz.) DOLE® Mediterranean,
  •     (12 oz.) American or other DOLE Salad Variety
  •     1 can (15 oz.) black beans, rinsed and drained
  •     1 can (7 oz.) Mexican corn or
  •     1 can (8-3/4 oz.) whole kernel corn, drained
  •     1 large tomato, chopped
  •     1/4 cup vegetable oil
  •     1 teaspoon grated lime peel
  •     3 tablespoons lime juice
  •     2 tablespoons finely chopped fresh DOLE Cilantro or parsley

 

Directions:

Toss salad blend, black beans, corn and tomato in large serving bowl; set aside.
Combine oil, lime peel, lime juice and cilantro in small bowl. Pour over salad; toss to evenly coat.
