Suji Ka Halwa Shab e Barat Halwa Recipes

Ingredients:

  • Fine Suji (Semolina)     1 cup
  • Sugar     1 cup
  • Ghee (clarified butter)     1/3 cup
  • Chopped almonds (optional)     2 tbsp
  • Raisins (optional)     2 tbsp
  • Shelled melon seeds (optional)     2 tbsp
  • Small cardamom     1

Method:

Crush cardamom to a fine powder. Keep aside.
Chop almonds coarsely lengthwise and keep aside.
Boil 3 1/2 cups of water and keep it on low heat.
Roast suji in ghee till it’s dark brown on medium heat. Halwa tastes better if suji is really dark brown. Keep stirring it constantly otherwise it will burn.
Add almonds and roast for 2 more minutes. Add melon seeds and roast for a minute. You will hear the seeds pop.
Add raisins, cardamom powder, sugar and boiling water.Stir to mix everything. Keep stirring. Water will be quickly absorbed by suji. Be careful, sometimes suji and water lumps pop up a little. Once it’s pretty thick, turn off the heat.Garnish with almonds and serve.
