Almond Cashew Chicken Eid Recipe

  •     1/2 cup no-salt-added chicken broth
  •     1/4 cup low-sodium soy sauce
  •     3 Tbsp all natural almond butter
  •     1 Tbsp grated fresh gingerroot
  •     2 tsp honey
  •     1 tsp dry mustard
  •     1/2 Tbsp extra virgin olive oil
  •     3 boneless, skinless chicken breasts, cut into 1-inch cubes
  •     2 cloves garlic, minced
  •     1 red pepper, diced
  •     1 cup frozen shelled edamame beans, thawed
  •     3 green onions, sliced
  •     2/3 cup unsalted raw cashews
  •     1 1/2 cups cooked brown rice or quinoa


To prepare sauce: in a medium bowl, whisk broth with soy sauce, almond butter, ginger, honey, and dry mustard. Set aside.
In a large skillet, heat olive oil over medium heat. Add chicken and garlic and cook until chicken is done. Add pepper and edamame and cook for 3 minutes. Add onions and sauce. Bring to a boil then reduce heat to medium-low and cook until sauce has thickened.
Serve stir-fry over cooked rice or quinoa (if desired) and sprinkle with cashews.
