Enselada Fresca Fresh Salad
Enselada Fresca Fresh Salad Ramadan Recipe
Ingredients:
- 1 package (8 oz.) DOLE® Mediterranean,
- (12 oz.) American or other DOLE Salad Variety
- 1 can (15 oz.) black beans, rinsed and drained
- 1 can (7 oz.) Mexican corn or
- 1 can (8-3/4 oz.) whole kernel corn, drained
- 1 large tomato, chopped
- 1/4 cup vegetable oil
- 1 teaspoon grated lime peel
- 3 tablespoons lime juice
- 2 tablespoons finely chopped fresh DOLE Cilantro or parsley
Directions:
Toss salad blend, black beans, corn and tomato in large serving bowl; set aside.
Combine oil, lime peel, lime juice and cilantro in small bowl. Pour over salad; toss to evenly coat.
